Hi, my name is Edyta Czaplicka Hannas and I live in New York, with my wonderful husband Eric and now two little cutie pies, Gabriel and Aiden. I’m originally from Poland and I love cooking and sharing my love for Mediterranean and European foods.
If you hadn’t already guessed it, I’m passionate about Mediterranean and European foods and want to share that passion with whomever is interested. With two little boys, finding time to cultivate my passion may not always be easy, but I certainly try to feed this blog (like the boys in my house). Many years ago, my husband once told me that its a shame that he’s the only one who enjoys the dishes borne in my kitchen. The point he was making, and which planted the seed for this blog, was that I should share my meals with a larger audience. And so it was that this crazy blog idea was born.
I love a healthy dose of EVERYTHING. That said, moderation is my mantra. I love healthy foods, vegetable juices, fish, vegetarian dishes, Mediterranean diet, Greek, French, Italian, Spanish, Hungarian, German food etc. and of course Polish Food. But I also love all kinds of cheeses, sour cream, and heavier dishes occasionally (who doesn’t?). So, what you’re going to see here is a a focus on healthy options with a dash of ‘Innocent Delights.’ Oh, and did I mention that my husband is a big time carnivore (red meat)! Occasionally though, I do catch him making healthy dietary decisions of his own free will…love him! This obviously opens the door to the rare occasions when I’m able to enforce a ‘Meatless Monday’ menu at home – the moniker helps him buy in too. I’m always trying to put little spins on foods he’s supposedly finds distasteful. I appreciate the challenge. But red meat isn’t the only protein he requests, luckily for both of us he loves fish too!
What does all of this mean? Basically, that while you may see some of the chicken/turkey/beef dishes on a blog for HIM, there’s going to be plenty of healthy dishes for ME too. Honestly, I cannot imagine living life without olive oil and lemons. Therefore this Mediterranean Diet is my absolute favorite and the best for a healthy heart – with lots of vegetables, grains, olive oils, seafood, greek yogurt, red wine and moderation of meat and cheese. And, lest I forget, of course Polish dishes will always hold a special place in my heart, and on here too. Let’s face it: who doesn’t love a good Pierogi?
I don’t have a culinary degree or any formal culinary education; rather, I’m an attorney by trade (who knew?). So my cooking comes from heart, without the polish of a ‘professional’ chef! In fact, by no means do I consider myself a ‘chef,’ in any possible interpretation of the word. What I am is just a simple home cook who wants to share her passion.
With that said, I also want to give a shout out to a few famous chefs out there who I do admire and their recipes often inspire me. I will be sure to mix in some of these dishes and let you know how they come out for me. When I do so, I will always refer you to the source so you can try recreate it on your own.
Finally, as Julia Child famously said: “Dining with one’s best friends and beloved family is certainly one of life’s primal and most INNOCENT DELIGHT.” I encourage you to enjoy the ride with me and explore my ‘Innocent Delight.’ Maybe you’ll find something in here that you’d like to share with your best friend or beloved family.
