Hi, my name is Edyta Czaplicka Hannas. I live in Bellmore, NY, with my wonderful husband Eric and this little cutie pie, our blue eyed son, Gabriel. I’m originally from Poland and I love to share European food.
I’m a full-time working mother who is passionate about food and wants to share that passion with the world. With ‘two full-time jobs’ already, finding time to cultivate my passion may not always be easy, but I will do my best to create a scrumptious posts on this blog. My husband once said, that its a shame that he’s the only one who enjoys those delights coming out from my kitchen. Obviously, we love to have guests and entertain so our guests have a chance to try my cuisine as well. But the point was that I should share it with the larger audience. Hence, this crazy blog idea was born.
I love a healthy dose of EVERYTHING. That said, moderation is my key word. I love healthy foods, vegetable juices, fish, vegetarian dishes, Mediterranean diet, Greek, French, Italian, Spanish, Asian food ect.. and of course Polish Food.; but I also love all kinds of cheeses, sour cream, and heavier dishes occasionally (& who doesn’t?). So, what you’re going to see here is a mixture of healthy options (in majority as I am trying to teach my little one healthy eating habits) with a dash of ‘Innocent Delights.’ Oh, and did I mention, that my husband is a big time carnivore (red meat)! From time to time though, I do catch him making healthy dietary decisions of his own will…Love Him! This obviously opens the door to the rare occasions when I’m able to enforce a ‘Meatless Monday’ menu at home. Because I’m trying to always put little spins on foods he’s supposedly finds distasteful, I manage to get away with this. 🙂 Luckily (for both of us) he loves fish! Obviously then we have that pretty often too.
So, what does all of this mean? Basically, that while you may see some of the chicken/turkey/veal dishes on a blog for HIM, there’s going to be plenty of healthy dishes for HER – i.e., all the veggies, parsley, olive oils and lemons. Honestly, I cannot imagine living without olive oil and lemons. Therefore the Mediterranean Diet is my absolute favorite and the best for a healthy heart. Asian is super healthy and delicious as well so I do love the idea of Mediterrasian Diet with lots of vegetables, grains, olive oils, seafood, greek yogurt, green tea, red wine and moderation of meat and cheese. And, lest I forget, of course Polish dishes will have some special place in here too. Let’s face it: who doesn’t love “pierogis?”
I don’t have a culinary degree or any formal culinary education. I’m cooking from my heart and with love! So by no means I would consider myself a ‘chef’ in any possible interpretation of the word. Rather, I’m just a simple home cook who wants to share her passion.
With that said, I also want to mention that there are few famous chefs out there who I admire and their recipes often catch my attention. I will be mix in some of these dishes and let you know how they come out for me. I will always refer you to the source so you can try recreate it on your own.
Finally, as Julia Child famously said: “Dining with one’s best friends and beloved family is certainly one of life’s primal and most innocent delights.” I invite you to enjoy the ride with me and explore my ‘Innocent Delight.’ Maybe you’ll find something here that you’d like to share with your best friend or beloved family.
