Preheat the oven to 400 degrees F
Place each beet separately on sheets of aluminum foil
Sprinkle with salt and pepper, then drizzle a little bit of olive oil on each beet
Close up the individual foils and place them on baking sheet
Bake beets for 1 hour and then wait until they cool down
Add arugula to the serving dish, quarter beets and tomatoes and add them on top of arugula
Add goat cheese and red onion
Mix together balsamic vinegar, olive oil, salt and pepper and pour over the salad.
Sprinkle with few parsley leaves
Serve immediately
